This Chili Cauliflower is a crunchy, flavorful snack made entirely without oil, perfect for a weight loss–friendly diet that doesn’t compromise on taste. A whole head of cauliflower is cut into bite-sized florets and coated in a spiced chickpea flour slurry with turmeric, coriander, cumin, chili powder, black pepper and salt. The florets are air-fried until golden and crisp, then tossed in my ultimate four-ingredient hot sauce—a simple, zesty blend of chilies, garlic, tomatoes, and salt. Air-fried again, the result is cauliflower that’s crispy on the outside, tender on the inside, with a bold, spicy kick. A healthy, satisfying snack or appetizer that’s naturally free from oil and refined sugar.

Instructions

  1. Take a large cauliflower head and cut it into bite-sized florets. Set aside.

  1. In a bowl, add chickpea flour and a little water. Stir continuously, adding water gradually to avoid lumps, until you get a smooth, lump-free slurry.

  1. Mix in your spices—turmeric powder, coriander powder, cumin powder, chili powder, and salt—until well combined.

  1. Pour the spiced slurry over the cauliflower florets. Use your hands to evenly coat each floret with the mixture.

  1. Arrange the coated florets in the air fryer basket and air fry at 400°F for 22 minutes, flipping halfway through.

  1. Remove the florets and pour my ultimate four-ingredient hot sauce (chilies, garlic, tomatoes, salt) over them. Mix thoroughly so every floret is coated.

  1. Air fry the coated florets for 5–10 minutes on each side until the outside is crispy and the inside remains soft.

Remove from the air fryer and serve hot.
