Grate the carrots and set them aside.

Mash the bananas into a smooth, fine paste.
Combine the mashed bananas and grated carrots in a large mixing bowl.

Add oats and coconut powder to the bowl and mix well.

Add hemp seeds and almonds.

Add sea salt and flax seeds.

Add baking powder, chia seeds, vanilla extract, and dates.

Mix everything together until well combined.
Transfer the mixture to a food processor and blend until you get a thick, uniform batter. (No need to add water.)

Spoon the batter into an oven-safe muffin tray, filling each cavity evenly.

Bake at 400°F (200°C) for 20–25 minutes, or until set and lightly golden on top.

Remove from the oven and let cool slightly before serving.
