  1. Chop and prepare all the vegetables before you start cooking.

    Heat a pan over medium heat and add the chopped onions. Sauté until translucent.

  1. Add the chopped garlic and cook until the mix turns fragrant. If it starts sticking to the pan, add a little water.

  1. Add Jalapeno peppers and let it cook for a minute.

    Add a little water to prevent sticking and aid the cooking process.

  1. Add the chopped tomatoes and cook until they completely break down and form a thick, saucy base.

  1. Add the boiled peas and stir to combine.

    Add water, if required.

  1. Break the tofu into bite-sized pieces and add it to the pan. Cook until most of the moisture evaporates.

  1. In a small bowl, make the chickpea flour slurry by mixing 1 tablespoon chickpea flour with 4 tablespoons water until smooth.

    Add the slurry to the pan and cook, stirring continuously, until the mixture thickens and the raw chickpea flour smell disappears.

  1. Remove from heat and sprinkle with fresh cilantro.

    Serve hot with sliced avocado.
