Wash and peel the russet potatoes.

Slice the potatoes into thin, even rounds, keeping the thickness as consistent as possible.

Sprinkle sea salt on both sides of the potato slices and gently rub it in.

Line a plate with parchment paper and arrange the potato slices in a single layer.
Microwave for 4 minutes.

Flip the slices and microwave for another 4 minutes.

Check for crispiness. If some slices are still soft, microwave in short 30–60 second bursts until crisp (thicker slices may need extra time).

Remove and let cool. The chips will continue to crisp up as they cool.

Serve with my creamy almond hemp sriracha sauce or any sauce of your choice.
